I Am Having An Affair

I have a confession to make….. I am a cheater, and I have been cheating for several years now. It’s to the point where I can’t stop. This is not a phase. I may seem entirely invested in my career, my family/friends, other such activities that fill my time, but I have a mistress that distracts me from all of these.
I, am in a long term love affair with cheese.


How can someone not love cheese? It encompasses all the characteristics I would want my future partner to have. Sensitive yet funky. Cultured (in all the ways one can be cultured), dynamic, and nostalgic. Cheese is just food, but it has depth and history. Did I also mention the gastro boner I get when looking at it? I have always wanted to open a cheese “thing.” I don't know what else to call it, so I call it a thing. Something between a cheese bar, and catering business. I imagine a giant wooden counter covered in slabs of cheese. Then, a glass case of the accouterments to pair. Finally, baskets of crackers, bread, etc. All in a row. It will be like chipotle but for cheese boards. You step up to the counter and go down the line. “Bleu, and camembert please, topped with raspberry compote please, Iberico on the side please, French bread please.” And right before you, your cheese platter is made. Take it back to your table and share it (sharing is the best part). Wine and beer to be offered as well (obviously). Cheese isn’t just for snobs, or the rich. It’s for all of us. It does a really good job at bringing people together. Cheese is communal. And primal. No one uses utensils when hovering over a spread, and I love that. It can get sloppy, but no one seems to mind. One day, I may take the leap and leave my nursing career to marry cheese, but until then, I will continue to cheat.
